Summer Pop-up Dinner Series: Elixir Wine Bar x Chef Adrien

Experience the flavors of Central Oregon through an intimate ten-course tasting menu created by Chef Adrien Calmels. Inspired by the region’s early summer micro-seasons, the menu showcases locally grown, foraged, and fermented ingredients, including wild mushrooms, seasonal produce, and house-made preserves. Each dish reflects a deep connection to the landscape, producers, and culinary traditions of the Pacific Northwest.
To provide guests with a more intimate dining experience, two dinner seatings will be offered. The first seating begins at 5:00 PM, ideal for those who prefer an earlier dining time. The second seating begins at 8:00 PM, offering a later evening experience. Both seatings feature the same menu and service, allowing guests to choose the time that best fits their schedule.
A Central Oregon native, Chef Adrien Calmels honed his craft in Michelin-starred kitchens across Paris, Hong Kong, and New York City and was recognized by San Pellegrino USA as an Upcoming Young Chef. Now back in his hometown, he is presenting a series of exclusive pop-up dinners that celebrate the region’s remarkable bounty.
“This pop-up is about creating a one-of-a-kind experience that highlights the micro-seasons of the Pacific Northwest while fostering genuine connection with guests,” says Calmels. “It’s deeply meaningful to return home and share what I’ve learned over the past decade while honoring the vibrant community of food lovers and makers here.”
To further enhance the experience, Ermisch Winery & Tasting Room is offering an optional curated wine pairing designed to complement each course.
